Ingredients:
1 Cup Gluten Free Oats
3/4 Cup Gluten Free Flour
1 1/2 tsp Baking Powder
1 1/2 tsp Ground Cinnamon
1/8 tsp Salt
2 Tbsp Coconut Oil
1 Large Eggs
1 tsp Vanilla
1/4 Cup Ginger Lemon Honey
1 Cup Diced Apples
Instructions:
1~ Whisk together oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in Infused Honey. Add in the flour mixture, stirring until just incorporated. Fold in the apples. Chill for 30 minutes.
2~ Preheat oven to 325 degrees, and line a baking sheet with parchment paper.
3~ Drop the cookie dough into 15 rounded scoops onto the parchment paper using a scoop and spatula, and flatten slightly. Bake at 325 for 11-14 minutes. Cool on the pan for 10 minutes before placing on a wire rack.
*Fun fact~ If you ingest Gingerol, which is a natural component of ginger root, it benefits GI motility; the rate at which food exits the stomach and continues along the digestive process, so food doesn’t linger as long in the gut.
