Garlic Honey

Writer's picture: HollieHollie

Garlic honey is a classic herbal honey that is antimicrobial and a prebiotic food. Garlic honey can be prepared and stored for 1-2 months in the fridge.

Refrigerate right away to not allow the honey and garlic to ferment.

  • Carefully peel garlic cloves to fill your jar 2/3 full with cloves. Try to avoid puncturing the cloves, if possible.

  • Cover garlic with honey.

  • If you intend to use this as a topical honey, add 20-30 drops of antimicrobial oils (lemongrass, eucalyputus, peppermint, and orange oil). Not for internal use!

  • Store in the fridge, taking spoonfuls out as needed for topical or internal infections. Cloves can be pressed or chopped 10 minutes prior to application to speed the production of allicin within the garlic that is highly antimicrobial.

*Allicin is an unstable compound and will break down if not used within 30-60 minutes.
