Ingredients
1/2 cup honey
1/3 cup coconut oil
2 Tablespoons vanilla
1 pinch of salt
3 cups GF rolled oats
1/4 cup mini chocolate chips
Instructions
Combine honey and coconut oil in a medium pot. Bring to a simmer, and once pot starts bubbling up all over, start the time for 1 minute.
When the time is up, remove from heat and stir in the vanilla, salt, cocoa powder. Let it cool down for 10-15 minutes.
While the pot is cooling, prepare a 9x9 inch baking dish with parchment paper.
After the mixture has cooled for 10-15 minutes, stir in the oats and chocolate chips.
Press the granola bar mixture into the pan, hard. You want to do multiple rounds with your spatula. Spraying the spatula or back of a spoon will help to push the granola down.
Cool in the fridge for 4 hours or overnight, before slicing bars.
