To prepare a Hawthorn vinegar, collect berries when they are either orange or red. The berries have increased concentration of heart toning compounds when they are in the early ripening stages (more orange than red) but can be harvested whenever they are available to you.
Place hawthorn berries in a jar, and use the folk method to cover the berries with apple cider vinegar.
Place in a dark, warm place and shake daily for 2-4 weeks.
The berries may remain in the jar, or they can be strained out after 2-4 weeks.
Store hawthorn vinegar in the fridge.
Using this as a base for salad dressings, add it to beans or broth.
