A wonderful nervine, great for uplifting the mood and alleviating depression, rose also has antispasmodic, aphrodisiac and sedative qualities.
Ingredients
2 cups fresh rose petals
2 cups filtered water
2 cups of sugar
juice of one lemon (3 Tbsp)
1 box pectin
Instructions
Add the rose petals and filtered water in a pot.
Turn on the heat and simmer gently for 10 minutes. As it simmers, the color of the petals wash out and they get very pale.
*After 10 minutes, pour through a strainer to remove the spent rose petals. Return the juice to the pot. (Optional step. I love how it looks with the petals.)
Add most of the sugar, reserving about 1/4 cup. Stir until sugar dissolves.
Next, add the lemon juice. Let simmer for another 10 minutes. Look at the beautiful color!
Mix the reserved sugar with the pectin, adding to the pot.
Simmer the liquid for another 20 minutes, then ladle into sterilized jar.
You can store your jars of jelly in the fridge for up to 6 months, or you can water-bath it, giving it a longer shelf life.
