Rose Jelly

A wonderful nervine, great for uplifting the mood and alleviating depression, rose also has antispasmodic, aphrodisiac and sedative qualities.

Ingredients

2 cups fresh rose petals

2 cups filtered water

2 cups of sugar

juice of one lemon (3 Tbsp)

1 box pectin

Instructions

  • Add the rose petals and filtered water in a pot.

  • Turn on the heat and simmer gently for 10 minutes. As it simmers, the color of the petals wash out and they get very pale.

*After 10 minutes, pour through a strainer to remove the spent rose petals. Return the juice to the pot. (Optional step. I love how it looks with the petals.)

  • Add most of the sugar, reserving about 1/4 cup. Stir until sugar dissolves.

  • Next, add the lemon juice. Let simmer for another 10 minutes. Look at the beautiful color!

  • Mix the reserved sugar with the pectin, adding to the pot.

  • Simmer the liquid for another 20 minutes, then ladle into sterilized jar.

  • You can store your jars of jelly in the fridge for up to 6 months, or you can water-bath it, giving it a longer shelf life.
