Violet Jelly

Ingredients


2 c violets

4 c water

1/4 c lemon juice

1 box pectin

4 c Sugar







  • Clean flower.

  • Add flower to a quart jar adding 4 c boiling water making a tea. Allow to steep for 30 minutes.













  • Add lemon juice and watch the magic that happens.

  • Add liquid back to sauce pan either straining the flower or keeping it in the jelly.










  • Add pectin and bring to a boil for 1 minute.

  • Stir in sugar and bring to a boil for one minute.











  • Place in jars.












These are so beautiful, the vivid color changing that the plant does throughout the process is truly breathtaking. These make a great gift.
